Clove & Canopy was born from a love affair with the aromatic kitchens of South Asia. Our founder, Chef Arjun Malhotra, spent two decades traversing spice markets from Kerala to Kashmir, collecting recipes passed down through generations.
Every dish on our menu tells a story — of sunrise harvests, slow-simmered traditions, and the belief that food is the most intimate form of hospitality.
Our signature dish — slow-cooked for 12 hours with star anise, cardamom, and a whisper of saffron. Served atop a bed of turmeric-infused polenta.
Aged basmati rice layered with fragrant spices, caramelized onions, and tender proteins — sealed and slow-cooked in the traditional dum style.
With over two decades of culinary mastery across three continents, Chef Arjun brings a philosophy rooted in respect — for the ingredient, the tradition, and the diner.
